About the role
We are looking for an energetic, hands-on and commercially minded Festival Street Food Stall Supervisor & Head Cook to take full responsibility for running our Tornado Potato Stall at Skate Leicester Square.
This is a practical, hands-on role for someone who enjoys the energy of live events, takes pride in serving great food and knows how to run an efficient, well-organised food operation.
You will be responsible for the complete operation of the stall, from setting up equipment and preparing ingredients through to cooking, serving customers, managing staff, controlling stock and cash, and closing down safely at the end of each event.
We want someone who can take ownership, work independently and create a fun, welcoming customer experience while delivering high standards of food quality, hygiene, service and commercial performance.
Key responsibilities1. Stall management and operations
- Take full ownership of the day-to-day running of the stall at festivals and events.
- Organise stall setup, equipment checks, preparation, service and end-of-day close-down.
- Ensure the stall is clean, organised, fully stocked and ready to trade on time.
- Manage the service operation during busy periods, maintaining speed and quality while keeping queues moving.
- Troubleshoot operational issues and take responsibility for resolving problems as they arise.
2. Food preparation and cooking
- Prepare potatoes onsite, using specialist spiral-cutting equipment to produce consistent tornado potatoes.
- Operate commercial frying equipment safely and efficiently.
- Maintain consistent portion sizes, presentation, crispness and product quality.
- Manage cooking batches and preparation levels to meet demand during peak trading.
- Prepare seasonings, sauces and accompaniments and ensure products are served attractively.
- Minimise food waste and maintain appropriate food storage and handling standards.
3. Staff leadership and supervision
- Recruit, brief, train and supervise stall staff where required.
- Allocate roles across preparation, cooking, finishing, serving and payment.
- Maintain a positive, hardworking team environment.
- Manage breaks, attendance, performance and staff standards during events.
- Lead by example, remaining hands-on during busy service periods.
4. Customer service and sales
- Deliver friendly, efficient and engaging customer service.
- Maintain an attractive and well-presented stall.
- Encourage sales through product knowledge, upselling and effective service.
- Handle customer feedback and complaints professionally.
- Monitor queues, sales patterns and popular products, adapting the operation to demand.
5. Stock, purchasing and commercial performance
- Plan ingredient, oil, packaging and consumables requirements for each event.
- Monitor stock levels and ensure replenishment is organised in advance.
- Keep accurate records of stock usage, waste and sales.
- Operate the point-of-sale system and handle cash where applicable.
- Monitor sales against targets and identify opportunities to improve profitability.
- Control costs, reduce wastage and protect margins.
6. Food safety, health and safety
- Maintain excellent food hygiene and safe food-handling practices.
- Follow the business's food safety management procedures and allergen controls.
- Ensure cleaning schedules, temperature checks and relevant records are completed.
- Operate fryers and other equipment safely, including managing hot oil.
- Follow the festival's electrical, fire-safety, gas-safety and site rules as applicable.
- Report incidents, equipment faults and potential hazards promptly.
- Ensure waste, wastewater and used cooking oil are disposed of appropriately.
7. Equipment and logistics
- Check that all equipment, utensils, ingredients and packaging are ready before each event.
- Manage safe loading, unloading, transportation and storage of equipment where required.
- Identify faults, organise basic maintenance and report repair requirements.
- Ensure the stall is properly secured and left clean and tidy after trading.
Essential experience and skills
- Experience running or supervising a street food stall, food kiosk, catering operation or similar fast-paced food business.
- Confident cooking experience, ideally with commercial deep-fat fryers.
- Strong practical organisational and problem-solving skills.
- Experience managing or supervising staff.
- Good understanding of food hygiene, allergen management and safe working practices.
- Commercial awareness, including stock control, waste management and sales performance.
- Comfortable working independently and taking responsibility for an operation.
- A positive, energetic attitude and excellent customer service skills.
- Able to work evenings, weekends, long event days and variable festival hours.
- Physically capable of standing for extended periods and safely handling the equipment and supplies required.
Desirable experience
- Previous experience at UK festivals, markets, outdoor events or street food concessions.
- Experience using commercial food preparation equipment and POS systems.
- Food hygiene training, ideally Level 2 or above.
- Experience with event logistics, temporary catering setups and food business compliance.
- A full UK driving licence and access to suitable transport, if required for the role.
Personal qualities
We are looking for someone who is:
- Hands-on: Happy to prepare, cook, serve and clean rather than simply supervise.
- Self-sufficient: Able to run the stall without constant direction.
- Commercially minded: Understands the importance of sales, margins, stock and waste.
- Calm under pressure: Can manage queues and unexpected challenges during busy service.
- A team leader: Sets standards, motivates others and leads by example.
- Customer-focused: Takes pride in the food and the experience delivered.
- Reliable: Understands that festivals are time-critical and preparation must be completed before service begins.
What success looks like
The successful candidate will:
- Set up and open the stall on time, fully prepared for trading.
- Deliver consistent, high-quality tornado potatoes at an efficient service pace.
- Manage staff effectively and maintain a positive working environment.
- Keep the operation clean, safe and compliant.
- Maintain accurate stock, waste and sales records.
- Work towards agreed sales and profitability targets.
- Leave the stall properly cleaned, secured and ready for the next event
